This weekend I made a really good cheesecake dessert for my friend's daughter's quincenera... I used my standard cheesecake recipe which can be seen below in another post.
I cooked about 4 apples, sliced, with some apple juice, lemon, sugar and cinnamon. Similar to a pie filling. I didn't measure the juice, but it was probably about a half cup.
When finished, I drained the apples and arranged on the cheesecake in a single layer.
I then used a double boiler to melt about 3/4 cup of salted-caramel chips (available in a grocery store by the chocolate chips) with about 1/2 cup of heavy cream. Stir constantly. They will melt within a few minutes.
Then I drizzled the caramel sauce on top of the apples. I used a slotted spoon so it could be spread evenly.
It was super simple. I've had a lot of compliments on it.
