I hate typical oatmeal---the thick porridge looking stuff. Its not very appealing. I also realize I dislike warm oatmeal. It is easier for me to eat when it is like a cold cereal.
I know, I'm weird.
I also don't have a lot of time in the morning. So I have created a recipe using steel-cut oats which is overnight, delicious, and crazy healthy.
For those who don't know, steel-cut oats are less processed than the typical microwaveable quick oats we get from Quaker Oats and minute-oatmeal containers. Those oatmeals have already been partially steamed and then dehydrated. In the process, one loses some of the nutritional aspects.
I'm not saying not to eat the instant oatmeal. In fact, I love it also! But I tend to mix it with the steel-cut oats.
They look like little granules or pellets. Not very appealing to look at.
Typically, they require 20-30 minutes of cooking.
But I make them overnight.
I take a serving of steel cut oats, about half a cup, and put it into the bottom of a tupperware, bowl or jar. I add about twice as much almond milk. You can use regular milk too if you're not into almond milk. I also add about a half cup of vanilla yogurt and a sprinkle of cinnamon. Stir it up well.
You can add additional things... I like cutting up some fresh fruit. Apples, berries, peaches or pears. Stir it in with the fruit after washing it.
Set this bowl in your fridge. The next morning, you have a yogurt parfait which is delicious, smells super good, and if you noticed... in my ingredients there is NO additional sugar. Just the natural sugars from the foods themselves.
I've been eating this for the last week or two.
You can use regular oats with this also or the minute-microwaveable too. You might want to use a little less milk. But it works regardless. It usually takes me about 2 minutes to prepare this breakfast the night before. If you put it in a tupperware, you just need to bring a spoon with you and you have a breakfast on-the-go.
