Preheat oven to 350 degrees.
In a mixer, combine 3 eggs, 2 cups grated zucchini, 3 cups sugar, 1 tablespoon lemon juice, 1 tablespoon Mexican vanilla, 1/2 cup water. Mix until blended.
In another bowl, combine 3 1/4 cups flour, 1 teaspoon nutmeg, 1 teaspoon cinnamon, 2 teaspoons baking soda. Mix one cup at a time into the liquid mixture
Add one chopped up and cored green apple (leave peels on)... I did mine into quarter inch slices. Also add 5 canned lychees and 1/3 cup of the canned lychee syrup juice.
Makes 2 8-inch pie pan size breads or probably two loaves.
Bake for 35-40 minutes.
