My cheesecake recipe is already sinful enough for a preacher to call you to repentance for making it. Adding the sour cream and fruit toppings could be dangerous.
A basic idea would be to take a small sauce pan and a 3/4 cup of fruit. In this case, let's plan on raspberries or blackberries.
Add a half cup of sugar with the berries into a sauce pan. You can flavor it with a little homemade lemon juice to give it some sourness. I think the tartness of lemon and rapsberries combined is very good. You can add a tablespoon of water. Stir constantly like you are making a jam. You can add a little gelatin if you would like to thicken it and not strain the juice off later. Generally, I like mixing fruit flavors...
When the sugar has melted and the berries are cooked and are now looking like a hot jam, remove from heat.
You can strain the juice off into a bowl if desired (do not throw away! It makes a delicious addition to homemade lemonades!)
Refrigerate sauce in a glass bowl until cool. Can be served directly on top of cheesecake or to the side depending on your guests.
Kiwis and mangos make great toppings for cheesecake as well. They do not take long to cook down. The kiwi's color will change slightly and will not be as bright, just as a warning.
Apples are also good. I love adding cinnamon not just for the flavor but there is something about cinnamon and sugar combined...
